Mom's Fluffy Banana Cake
makes 1 large 9x12 cake
 
Smash 2-3 bananas (enough to make at least one cup) -- set aside
 
Whisk together -- Keep in separate bowl:
     2 Cups flour
    1/2 tsp baking powder
    3/4 tsp baking soda
    1/2 tsp salt
    1/4 tsp nutmeg and 1 tsp cinnamon -- optional, but I use both
 
In LARGE mixing bowl put:
    1/2 Cup cooking oil (I use canola usually, can use any)
    1 1/2 cups sugar (have used Splenda once and it came out good, too)
    2 eggs -- whole
    1 tsp vanilla

Beat with mixer until well mixed (can also beat by hand)
 
To above mixture, add: 1/4 cup buttermilk (or sour 1/4 cup regular milk with 1 tsp lemon or lime juice -- which I usually do as I seldom have buttermilk)
 
Beat by hand or mixer until fluffy.
 
To above mixture, add flour mixture and bananas alternating -- begin and end with flour mixture.
 
Beat only until blended -- add 1 cup chopped walnuts or pecans -- optional -- pour into greased & floured cake pan. (I use the spray that already has flour in it.  Pam makes one, Baker's Joy makes one and Crisco makes one -- all have worked well when I used them)
 
Bake about 30-35 minutes at 350 degrees -- or until cake is done.
 
Let cool and either frost, or sprinkle with powdered sugar or you could drizzle with a glaze.  I powder sugar and it's great!
