DIRTY RICE by Brenda K. Narada


INGREDIENTS:

2 lb chicken gizzards
2 lb chicken livers
6 cups water
1 tspn salt
1 cup chopped celery
1 tspn black pepper
3 tblspn cooking oil
1 bunch green onion
3 cups cooked rice
DIRECTIONS:

1. Boil the gizzards and liver in water.
2. Cook the celery and green onion in oil and discard the excess oil.
3. Boil the rice separately and save the excess water.
4. Combine 4 cups of the reserved rice water to the vegetables, meat
and rice and simmer slowly until done.
