Mom's Chicken (or hamburger) Enchilada Casserole

 1 - 2 pounds lean hamburger ** (can substitute diced chicken or other meat)
Mostly Spice
garlic - minced
2 cans green enchilada sauce (10 oz cans)
2 cans cream of mushroom/chicken soup (or 1 can each of mushroom & chicken)
1 oz can diced jallapenos (or green chilies)
cheese
2 medium large onions
1-2 dozen tortillas

Directions:
 

Brown hamburger, breaking up as you cook
Add seasoning (mostly spice & extra garlic) ***
or use salt, pepper, and whatever spices you normally use
 
Blend the soups, enchilada sauce, jallapenos / chilies in a bowl.
 
Tear half the tortillas and spread in the bottom of a large cake pan
layer the soup mixture, then the onions, then 1/2 the cheese
Top with another layer starting with torn up tortillas
End with cheese.

Bake at 350 approx 45 minutes to an hour or until hot inside and cheese is bubbly
