Ty’s Chicken Recipe:  added 01/28/2021

 

Combine the following in a 1-gallon zip-lock bag:


2 cups flour or arrowroot flour

1 tbsp buttermilk powder
1 tbsp egg powder
1 tbsp paprika
1 tbsp oregano
1 tbsp thyme
1 tbsp tomato powder

2 tbsp onion powder
1 tbsp garlic powder
2 tbsp white pepper
1/2 tbsp cayenne (or less)
1 tbsp mustard powder
1/2 tbsp chili powder 
1 tbsp chicken bouillon
3 tbsp red bell pepper powder
1/2 tbsp Accent (or msg)

Add 10-18 legs or thighs to zip-lock bag

Shake the bag in all directions

As the seasoning coats the chicken -
     - release some of the air

Eventually release all of the air

Let the chicken set in the bag for an hour

Bake the legs / thighs at 400 for 35 minutes

Bake boneless thighs at 400 for 25 minutes
     - don't turn the chicken in either case

Sample one piece to make sure it's done
If you really want extremely hot chicken:

Add 1/2 tbsp (or less) of scotch bonnet -
     - and reduce the other pepper seasonings

For additional zest, add:

1/2 tbsp of jalapeno powder
or hatched green chili powder

(Hatched green chili powder, white pepper
      and flour have worked well all by themselves)

Be very sparing if you experiment with:

dill seed
Worcestershire
bourbon powder
